Festive Christmas Fettuccine Recipe for the Holiday Season with Wildgrain Pasta

Gorgonzola with Fettuccine, Sage and Nutmeg

The best thing about this dish is that it has a handful of ingredients and is super quick to make. However, the taste is so decadent and luxurious your guests won't know how little effort it took to create this showstopper for them! We all need dishes like this over the holidays!

I was given this recipe a few years ago by a colleague of mine with Italian heritage. So now I'm paying it forward!

I know some people are put off by the element of Gorgonzola or blue cheese being included. However, as someone who doesn’t like Gorgonzola myself but could eat bowls of this dish, please do give it a try. The cream dilutes the blue cheese so you just have a richer creamy sauce. Then the nutmeg and sage add a depth of flavor so you don't taste the cheese as much. If you love an Italian-American alfredo sauce this meal is for you.

The best pasta to use with this sauce are ribbons. We're using Wildgrain Fettuccine which cooks in just 8 mins. Ribbons are well suited to the creaminess of the sauce, as the butter sauce coats the pasta and clings to it. Italians do match pasta shapes to the type of sauce. This is to make sure you have the most incredible taste experience when you eat your meals.

How to make Gorgonzola with Fettuccine, Sage and Nutmeg

Ingredients:

  • A drizzle of olive oil.

  • 1 clove of fresh garlic (garlic powder can be used).

  • 45g unsalted butter.

  • 150g of gorgonzola dolce, broken into smaller cubes.

  • 150ml single cream, (not heavy cream /double cream, however, you can use half fat creme fraiche to be healthier!).

  • 400g Fresh Wildgrain Fettuccine pasta.

  • 5 sage leaves.

  • Pinch of grated nutmeg.

  • Salt and black pepper to taste.

  • Parmigiano Reggiano (Parmesan cheese).

Method:

  • Finely chop the garlic and cook gently (on a medium heat) in the olive oil in a deep saucepan.

  • Once translucent but not brown, add the Gorgonzola, cream and melt butter altogether.

  • Heat and stir until the cheese has melted and everything has combined.

  • Add the sage, nutmeg and salt and pepper.

  • Add the fresh noodles to the salted, boiling hot water. Check the packet for the exact cooking time. All pasta shapes and brands differ. Here we are using Wildgrain Fettucine which is cooked in 8 minutes al dente. 

  • Drain the hot pasta and be sure to add the cooked pasta to the saucepan with the Gorgonzola cream sauce. Slowly combine together the pasta mixture on a low heat until the fettuccine is coated in the creamy sauce.

  • Serve with a sprig of fresh herbs, we love sage with this dish and drizzle of olive oil.

  • If you like a sprinkle of Parmesan on your pasta you can add it to serve.

Serves 4.

Such a simple and incredibly delicious pasta dish. No one will believe it took you 15 mins to cook!

Tips:

  • Fresh Fettuccine works better than dried pasta.

  • If the sauce is drying out add a little pasta water and stir.

  • You can add a dash of white wine to the garlic before adding the cream and cheese.

  • Don't add lemon juice as the cream will curdle.
